Chicken Bacon Pasta with Tomato Sauce but lighter!

For this #TastyThursday we are doin a quick and easy dinner with not many ingredients. Just grilled chicken , bacon, onion, cherry tomatoes , broth and light cream . I loved this dish, how can you go wrong with any dish with a dish like this? I ended up adding light cream not sour cream or sriracha to make it lighter and not spicy but it was still amazing, Feel free to add the sriracha if you like it hot, it’s up to you! I also left out the mozzarella cheese and added the parmesan cheese when serving with pasta on top.

#chef tip! If you have lots leftover chicken breast meat then make it in batches and freeze it!

Turkey Bean Chili Soup!

A chili and soup all in one! a great Skinnytaste one and done recipe is here for this #TastyThursday

This lighter version of the classic meat chili that’s much better for you. Just add ground turkey, onion , black bean, diced tomatoes and corn and water . then Spice it up however you like ! Plus it tastes even better as leftovers . I’ve also used lean ground beef and top it sometimes with shredded cheese and sour cream! Perfect on a cooler day.

chef tip! for a veggie version you can add some veggies to the mix such as bell peppers or zucchini instead of the meat,

Lavash Bread as Pizza? Yes!

I’ve been researching healthier pizza and bread alternatives that are better for you and found this idea online from SkinnyTaste blog. It was so easy and good and creative! I personally believe that pizza can actually be quite healthy, depending on the kind of bread we use and of course the topping ingredients.

What is Lavash ?

Lavash Bread is low carb and a good source of fiber. Used in a roll-up sandwich or as a sliced party snack, this lavash bread will not fall apart. Middle East Lavash Bread is a reduced carb, high protein and has no cholesterol.

Joseph’s Bakery Low Carb Bread Flax Oat Lavash is the brand that I like to use and easy and I can buy in the my local grocery store. Highly recommended

For this pizza I added raw spinach , shredded mozzarella cheese, homemade mushroom tomato sauce and cooked organic 90% lean ground beef for protein . Bake flat at 425 degrees for 10 minutes until crisp . Use what ever cooked protein and veggies you like.

Chef tip! Don’t add a lot of sauce and toppings so it doesn’t get soggy.

A twist on good steak and a summer succotash

Sometimes you want to follow a recipe and sometimes you just end up doing it your way. Inspired by recipe I read in Real Simple magazine . Over the years I’ve collected tons of recipes from magazines, cut them out like coupons and save them a big binder. I save online recipes in files in my computer so they are like a searchable digital cookbook.

Highly recommend having a system to keep them organized and together whenever you need some cooking inspiration.

In true fashion, I changed up the ingredients based on what I had on hand at home in my freezer and fridge. Inspiration is all that you need to make great food at home.

The result a grilled Flat Iron steak with a succotash of charred yellow squash , corn and pancetta mixed together in olive oil. Super simple and tasty.

OMG Pasta Carbonara!

Ah Pasta Carbonara, tastes so good yet is so bad for you.

Like all classic recipes this is one that I don’t mess with when making a home. It’s a classic for a reason. This recipe is as easy as making the pasta and panchetta or bacon and tossing it together with rich egg yolks, Parmesan cheese and a bit of reserved pasta water to make the creamiest easiest sauce ever. It’s like stepping into Rome, Italy but enjoying it as normal weeknight dinner. True indulgence!

Chicken Caprese oh so captivating !

I saw this version of a Skillet Chicken Caprese dish from So Damn Delish food blog.

I love dishes like this because as a home cook make some adjustments to the recipe if you want to . It Came out great and really easy to do. I love that it all comes together in one skillet.

Building incredible flavor in a single skillet isa great trick I’ve learned to appreciate. The dish is done quickly and the clean up is easy to.

Some dishes are not only a colorful and gorgeous to look when done , but are also healthy and quick to make. This is a great quick meal whenever there’s not much time to spare if you have all the right ingredients at home.

A skinny skillet baked chicken parmesan? Yes!

Alright. So when chicken parmesan not incredible, right?

Tender chicken breast pounded thin, a tasty tomato sauce, light breading and with a giant slice of mozzarella and some parmesan cheese.

My remake is of a skillet baked chicken parmesan from Skinny Taste . Thanks to the Skinny Taste blog I found their awesome version. This version of a chicken parmesan is made also with all fresh ingredients and baked instead of fried so it is a great healthy and low-calorie dish with lots of flavor.

Baking the chicken instead of frying it in lots of oil and save on fat and calories without losing any flavor. My key ingredient was to use a homemade rich tomato sauce and good quality mozzarella cheese.
